docs: add Chainalysis integration

• Add Chainalysis to the ecosystem provider overview.
• Add a dedicated compliance and investigations section covering Stable support in KYT, entity screening, and Reactor.
• Document automatic token coverage for standards such as ERC-20 and ERC-721.
• Link to Chainalysis's official product pages, Stable integration announcement, and demo request page.

Why

Chainalysis announced Stable support on July 14, 2026. The integration was not yet represented in the Stable docs.

Impact

Teams evaluating compliance and investigation tooling can now find Chainalysis support and its verified Stable-specific capabilities in the ecosystem reference.
